Icing sugar (1 tablespoon, optional) – Lightly sweetens the cream.
Preheat the oven to 150°C (300°F) and line a baking tray with parchment paper.
Place the egg whites in a clean mixing bowl and whisk until soft peaks form.
Add the caster sugar one tablespoon at a time while whisking continuously. Continue whisking until the mixture becomes thick and glossy.
Gently fold in the cornflour and vinegar using a spatula. This helps create the signature soft center.
Spoon the meringue mixture onto the prepared baking tray and shape it into a round disc with slightly raised edges.
Place the tray in the oven and bake for 1 hour until the meringue becomes crisp on the outside.
Turn off the oven and leave the pavlova inside with the door slightly open. Allow it to cool completely.
Whip the double cream with icing sugar until soft peaks form.
Spread the whipped cream over the cooled meringue base and decorate with fresh berries.
Serve immediately.
