Hairy Bikers Turkey Chilli is a lighter variation of traditional chilli con carne. Instead of beef, minced turkey is used to create a leaner but still flavorful dish. The turkey cooks in a tomato-based sauce with onions, garlic, beans, and warming spices such as cumin, paprika, and chili powder.
Minced turkey (500 g) – Lean turkey creates a lighter chilli while still absorbing the spices well.
Onion (1 large, chopped) – Forms the base flavor of the chilli.
Garlic (3 cloves, minced) – Adds depth and aroma.
Red bell pepper (1, diced) – Brings sweetness and color.
Chopped tomatoes (400 g can) – Creates the main body of the sauce.
Tomato puree (2 tablespoons) – Intensifies the tomato flavor.
Kidney beans (1 can, drained) – Adds texture and protein to the chilli.
Ground cumin (1 teaspoon) – Gives earthy warmth.
Smoked paprika (1 teaspoon) – Adds mild smoky flavor.
Chili powder (1 teaspoon) – Adjust depending on preferred heat level.
Dried oregano (½ teaspoon) – Enhances the savory flavor.
Olive oil (2 tablespoons) – Used for sautéing the aromatics.
Chicken stock (½ cup) – Helps create the chilli sauce.
Salt and black pepper – Adjust to taste.
Fresh coriander or parsley (optional) – For garnish.
Chop the onion and bell pepper. Mince the garlic and measure out the spices. Having everything prepared before cooking keeps the process smooth.
Heat olive oil in a large pan over medium heat. Add the chopped onion and cook for about 4–5 minutes until soft.
Add the diced bell pepper and cook for another 2 minutes.
Stir in the minced garlic, cumin, paprika, chili powder, and oregano. Cook for about 30 seconds to release the fragrance of the spices.
Add the minced turkey to the pan. Cook while breaking it apart with a spoon until the meat is browned and cooked through.
Stir in the tomato puree and chopped tomatoes. Mix well so the turkey becomes coated with the sauce.
Pour in the chicken stock and bring the mixture to a gentle simmer. Allow it to cook for about 20 minutes so the sauce thickens and the flavors develop.
Stir in the drained kidney beans and cook for another 5 minutes.
Taste the chilli and adjust seasoning with salt and pepper. Garnish with fresh herbs and serve hot.
