James Martin’s Strawberry Jam is a traditional British fruit preserve made from fresh strawberries, sugar, and lemon juice. The mixture is boiled until it thickens and reaches the correct setting point.
Fresh strawberries (1 kg, hulled) – Choose ripe, fragrant strawberries for the best flavor.

Wash the strawberries carefully under cold water. Remove the green tops and cut larger berries into halves or quarters.
Place the strawberries into a large saucepan and add the sugar and lemon juice. Stir gently so the fruit becomes evenly coated with sugar.
Place the pan over medium heat. Stir slowly until the sugar dissolves and the strawberries begin releasing their natural juices.
Increase the heat and bring the mixture to a steady boil. Continue cooking while stirring occasionally.
Allow the jam to cook for about 15–20 minutes. During this time, the strawberries soften, and the liquid thickens.
Place a small spoonful of jam onto a chilled plate. If the surface wrinkles slightly when pushed with your finger, the jam is ready.
Sterilize glass jars by washing them with hot water and drying them in a warm oven.
Carefully pour the hot jam into the sterilized jars, leaving a small gap at the top. Seal the jars immediately.
Allow the jars to cool completely before storing them in a cool cupboard.
