Mary Berry BBQ Salad is a fresh mixed salad designed to complement barbecue dishes. It features crisp vegetables combined with lightly grilled ingredients and a simple dressing.
1 large head of romaine lettuce or mixed salad leaves (about 150 g)
1 cucumber, sliced
200 g cherry tomatoes, halved
1 red bell pepper, sliced
1 small red onion, thinly sliced
1 avocado, sliced (optional)
2 tbsp chopped fresh parsley or basil
3 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and black pepper to taste
Wash the vegetables – Rinse the lettuce, cucumber, and tomatoes thoroughly under cold water.
Prepare the lettuce – Tear the lettuce into bite-sized pieces and place it in a large bowl.
Slice the vegetables – Cut the cucumber, bell pepper, and red onion into thin slices.
Prepare the tomatoes – Halve the cherry tomatoes for easier mixing.
Add fresh herbs – Chop parsley or basil and add it to the salad mixture.
Make the dressing – In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
Combine everything – Add all vegetables to the mixing bowl.
Dress the salad – Drizzle the dressing over the salad and toss gently to coat.
Add avocado – Place sliced avocado on top just before serving.
Serve immediately – Transfer to a serving bowl and enjoy fresh.
