  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 4 salmon fillets, skin-on, about 6 oz each

Instructions

  1. Preheat the oven to 400°F / 200°C. Position a rack in the center of the oven for even heat distribution. This high temperature ensures the vegetables roast quickly and the salmon skin crisps without overcooking the interior.
  2. In a large mixing bowl, combine the halved baby potatoes, cherry tomatoes, asparagus pieces, and minced garlic. Drizzle with 2 tablespoons of olive oil, then sprinkle with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper. Toss thoroughly to coat all vegetables evenly; the oil helps conduct heat and promotes browning.
  3. Transfer the seasoned vegetables to a large, rimmed baking sheet, spreading them in a single layer. Avoid overcrowding to allow hot air circulation, which prevents steaming and ensures crisp edges. Place the lemon slices evenly over the vegetables for added flavor during roasting.
