River Cottage Plum Jam

River Cottage Plum Jam is a traditional British preserve made with ripe plums, sugar, and lemon juice. The fruit is gently simmered until it softens, then boiled until the mixture reaches a thick jam consistency.

Ingredients

Fruit Base

  • Fresh plums (1 kg, halved and pitted) – Choose ripe plums for the best flavor and color.

Sweetener

  • Granulated sugar (750 g) – Helps preserve the fruit and thicken the jam.

Acidity

  • Fresh lemon juice (2 tablespoons) – Enhances flavor and helps the jam set properly.

Optional Flavor

 

  • Ground cinnamon (¼ teaspoon) – Adds a gentle, warm spice note.

Instructions

Step 1 – Prepare the Plums

Wash the plums thoroughly, cut them in half, and remove the stones. Larger plums can be cut into smaller pieces for even cooking.

Step 2 – Combine Ingredients

Place the prepared plums in a large saucepan. Add the sugar and lemon juice, then mix gently.

Step 3 – Heat the Mixture

Cook over medium heat while stirring until the sugar dissolves completely and the plums begin releasing their juices.

Step 4 – Simmer the Fruit

Allow the mixture to simmer gently for about 10–15 minutes until the plums soften.

Step 5 – Bring to a Boil

Increase the heat and bring the mixture to a rolling boil. Continue cooking while stirring occasionally.

Step 6 – Check the Setting Point

After about 10–15 minutes, test the jam using the chilled plate method. If the jam wrinkles when pushed with your finger, it is ready.

Step 7 – Prepare the Jars

Sterilize glass jars by washing them in hot water and drying them in a warm oven.

Step 8 – Jar the Jam

Carefully pour the hot jam into the sterilized jars and seal them immediately.

Step 9 – Cool and Store  

Allow the jars to cool completely before storing them in a cool, dry cupboard.
