River Cottage Plum Jam is a traditional British preserve made with ripe plums, sugar, and lemon juice. The fruit is gently simmered until it softens, then boiled until the mixture reaches a thick jam consistency.
Fresh plums (1 kg, halved and pitted) – Choose ripe plums for the best flavor and color.
Granulated sugar (750 g) – Helps preserve the fruit and thicken the jam.
Fresh lemon juice (2 tablespoons) – Enhances flavor and helps the jam set properly.
Ground cinnamon (¼ teaspoon) – Adds a gentle, warm spice note.
Wash the plums thoroughly, cut them in half, and remove the stones. Larger plums can be cut into smaller pieces for even cooking.
Place the prepared plums in a large saucepan. Add the sugar and lemon juice, then mix gently.
Cook over medium heat while stirring until the sugar dissolves completely and the plums begin releasing their juices.
Allow the mixture to simmer gently for about 10–15 minutes until the plums soften.
Increase the heat and bring the mixture to a rolling boil. Continue cooking while stirring occasionally.
After about 10–15 minutes, test the jam using the chilled plate method. If the jam wrinkles when pushed with your finger, it is ready.
Sterilize glass jars by washing them in hot water and drying them in a warm oven.
Carefully pour the hot jam into the sterilized jars and seal them immediately.
Allow the jars to cool completely before storing them in a cool, dry cupboard.
